Frozen Parfait with White Chocolate and Raspberries

Sweet and tangy raspberries are combined with crunchy Amaretti biscuits and melted white chocolate to make a delicious filling for frozen double cream parfait. Originally created in France, this wonderful no-bake delight is a healthier and easy-to-cook alternative to traditional pastries and cakes. This recipe by Butlers Chocolates requires only several simple ingredients, including chocolate bars of their production, and doesn’t take too much time even if you’re a relative newbie in the world of cooking. Follow the simple directions below and satisfy your sweet tooth with this divine dessert.

  • 3 bars of Butlers White Chocolate Truffle Bars
  • 3 tablespoons of double cream
  • 500ml of fresh cream
  • 2 tablespoons of super-fine granulated sugar
  • 50g of Amaretti biscuits
  • 250g of fresh or frozen raspberries
  • 100g of Butlers Mixed Berry White Chocolate Bar
  • extra biscuits and raspberries for decorating

Step 1. Roughly break into pieces the white chocolate bars and combine with 3 tablespoons of double cream in a heat resistant bowl. Melt the mixture over a bain-marie or a pot with simmering water, carefully stirring until it gets smooth. Set aside and let it cool.

Step 2. Line a 2lb loaf tin with two layers of plastic cling film and one layer of baking parchment. Make both go over the edges of the tin, which should ease removing the frozen parfait.

Step 3. In a large separate bowl, whip 500ml of fresh cream with the super-fine granulated sugar. Once the cream forms very soft peaks, add the white chocolate mixture, drizzling it in parts and folding into the cream between each addition. It will create ribbons of white chocolate running through the frozen dessert.

Step 4. Add the raspberries and roughly crushed Amaretti biscuits into the whipped cream mixture, carefully folding them into it. Pour the mixture into the tin, pat the top with a spatula to smooth it, and cover with plastic cling film. Leave in a fridge freezer for at least 4 hours.

Step 5. Meanwhile, over a bain-marie or a pot with simmering water, melt the mixed berry white chocolate bar. Alternatively, use a microwave oven, but in short bursts and mixing in between. Leave to cool slightly.

Step 6. Remove the frozen parfait from the loaf tin. Make sure to peel off all the parchment paper and plastic wrap before serving. Drizzle the dessert with the melted mixed berry white chocolate and decorate with extra raspberries and Amarettu biscuits. Heat the blade of a large knife in a glass of hot water and cut the parfait into even slices. The dessert can be made up to two weeks ahead and must be stored in a freezer.
