Give us a tip on which day you came so I can find out who is responsible for the beer roast and the spaetzle. Normally it should and is soft and the spaetzle is definitely not overcooked. The thing with the fat, however, there has to be a bit, after all the roast is from pork neck and there is always a bit of fat, that's intentional, the roast will then be juicier and not dry. Did you say something to the service person who was clearing away that you didn't like it? Actually, they should of course ask if there is so much left on the plate, but sometimes that is not done, and we not only work with trained staff, but also sometimes with inexperienced temporary workers. There is no other way to manage the business, especially the beer garden business. If a guest doesn't like it and we've made a mistake, we usually don't let it go, but rather try to make it right by offering a different dish, a compensation (e.g. dessert) or the meal entirely partly taken out of the bill.
