You get out of the center, away from the ancient stone and the six-euro coffees, and you find yourself on the edges of the city where real Romans actually live and breathe. You find a seat outside at Chicken House. The neighborhood comes here to eat: working families, old guys arguing, kids running around. It’s an unpretentious, beautiful slice of local life. They are all here for the same thing: roasted chicken. Roasting a chicken is the ultimate test of a kitchen. If you want that pure, unadulterated chicken flavor, roasting is the only way to go. But let’s be honest: nine times out of ten, somebody screws it up. The white meat turns to sawdust, the dark meat gets dry, and we’ve all been conditioned to just settle for that mediocre compromise. Not here. This neighborhood spot somehow retains every drop of juice, locking it beneath a deeply savory, beautifully rendered skin. You ask the guy for a salsa, something picante, something with a bit of a bite. You expect a little plastic cup of factory-made sauce. Instead, the dude just hands you raw, unapologetic peperoncino. It’s a beautifully simple, no-nonsense move. You pair that fiery kick with a plate of golden roasted potatoes, patate al forno, crisp on the edges and seasoned perfectly, alongside some tender, bitter steamed artichokes, and a cold beer to wash it down. As you eat with your hands, the rapid-fire language of the outskirts slashes through the evening air. You hear a loud, slurred burst of camaraderie slice across the tables, "Ciao, Pepito!" or maybe a sharp, sarcastic "Ciao, Benito!" whispered under a stressed-out cook's breath. It doesn't matter which one it actually is. It’s the raw, unedited soundtrack of a neighborhood that belongs entirely to itself. Against all the high-end trattorias in the historic core, this unpretentious, juice-dripping-down-your-wrists meal quietly takes its place as one of the absolute best moments in Italy.
