The ambiance here is fantastic and probably among the best that Orange Beach/Gulf Shores offers. The wait before the pandemic for dinner could often be up to an hour and a half for a table but you could still get a seat at the bar or at one of the bar tables and order faster. These days you can usually grab a table a lot easier than before the crazy times. Lunch time has always been an easy time to eat here for the most part. They have a huge outdoor patio which is located directly on the water that wraps around their building that also has an outdoor bar and stage. Cobalt is the only place I've dined at in the Orange Beach area that properly begins your dinner with a serving of fantastic bread and herb butter (and you get multiple types of bread that are all delicious). Everything I've described up until this point rates a four or five star but unfortunately things drop off after this point that lower the overall rating to a three star. On one of my last lunch visits before the ick I got around to sampling the margherita pizza and unfortunately it was the absolute worst version of that style of pizza I've ever had and this was the first time I've never finished a pizza anyplace ever so I'd say they should take that off the menu immediately until they can retool that recipe. The food we were served on my last dinner visit was also very inconsistent. The mahi sandwich I had was served on bread I found unappetizing (toasted egg Kaiser instead of the fantastic bread they start you with) and drowned in mayonnaise while the fish itself was slimy and not well cooked. The firecracker shrimp are good but the "remoulade" they were in was unlike any remoulade I've ever had in New Orleans while the sauce was still good it was very thick and creamy (with some coconut also added I believe) which made it too much after eating a few shrimp as it was a bit too rich and thick as a meal. My lunch visits since the ick have all been good with their daily fish specials all being prepared quite well. They used to offer an amazing brunch buffet that was also a highlight of my past visits here that they stopped due to the pandemic and there seems to be no sign that amazing experience will ever return at this point. The service before the ick was also a bit slow on refilling drinks at times while after the ick the service actually seems to have gotten better during the lunch experiences I've had (I haven't had an opportunity to return for dinner yet). Overall this seems like a fantastic place but when the tourist hordes slam it there are certainly cracks in the seams that build up. Generally this is a four or five star service establishment until the high season crowd pressure kicks in then it seems to drop so just gauge the crowd levels to temper your expectations if the hordes are running thick. Sunday brunch here used to be a great value as they offered a substantial buffet along with $3 mimosas and so far that is probably one of the best dining experiences I've had here so PLEASE bring that back Cobalt as that was one of your real winning features to me and many of my friends.
