My wife and I were travelling to Toyama to try to catch the firefly squid season. Knowing that Toyama is a little out of the way for tourist, I did some research and found Sushi Gejo. The only problem was that they did not use an online reservation system. Fortunately, my hotel was able to make the reservation for me and it was worth going out of the way to spend a delicious night with Gejo. Getting there wasn't hard but does take a little time from Toyoma Station. The total trip takes about 30 min which includes about 7 min of walking once you get to Keirinjo-Mae Station using the Toyamako line. The walk takes you through a residential area and can be a little uncomfortable at night which is when we went. However, the neighborhood is safe and you come up to the Gejo from the side. The interior of the restaurant is nice an cosy with a few tables and a beautiful counter. We were greeted immediately by Gejo-san who spoke enough English for us to enjoy his personality. The restaurant wasn't full that night and there were only 5 of us so it was very intimate. Once the dinner started, you realized quickly why Gejo is a 1 michelin star restaurant. We chose the sake pairing with our dinner and they were great pairings. Nearly all of the ingredients are local to the Toyama area and with the abundance of seafood there, the fish and shellfish were incredible. Gejo-san also goes into the mountains to source some of his ingredients including the spring water that he serves in the restaurant. The sakes were also from local breweries. The dishware and glasses were also sourced from a local business run by his friend. Each course were beautifully presented and delicious. I lost count after 20 but there was a lot of variety. Since it was firefly squid season, he brought out a fishbowl containing life firefly squids. He then turned off the light and held the squid in his hand for a spectacular light show. We were then served the squids two ways. One was raw and the other was lightly boiled. The squids were live just a few seconds before you eat them. Another dish was a fugu (blowfish) dish that he made. If he did not tell me what it was, I wouldn't have known. It was presented beautifully but I did hesitate before I ate it. It was delicious like everything else was. Since everything is seasonal, the food you get will be different from mine. If you are in the Toyama area and want to have a great night out, give Sushi Gejo a try. Its a friendly and intimate experience that isn't pretentious and is a lot of fun.
