Don't let the exterior fool you! You would be greatly disappointed. Flavour packed, unique Canadiana twists ( bread baked in Maple syrup cans!), Bison was delicious... highly recommended by another chef in town and did not disappoint.

We came on Thursday night and it wasn't busy at all. We ordered the Croquettes and Crab Touton to start. For my main, I got the Black Cod. Everything was delicious. I went with my sister, who is pregnant. And the only issue I had with the service was that I felt like they were a bit pushy with the drinks. She obviously wasn't going to have a cocktail or anything, but she was also a bit skeptical of a mocktail like a mojito since she's pretty much staying away from raw herbs, vegetables, etc. to be safe. But they asked her three times during the meal about a drink, which is honestly a bit much in my opinion. Other than that, service was attentive and polite.

Had the chance to check out Gray Jay Hospitality. The ethos towards sustainability and Canadian only ingredients seemed like a worthwhile cause to support in principle, and thankfully the flavours and creativity shone through as well. Made me think a bit of Pearl Morissette. I particularly enjoyed their whimsical dessert course, "Boreal", which resembled a stick you'd find in the forest. It was actually a donut coated in birch syrup, and it was reminiscent of hiking and camping. It was served with a sweet, house-whipped ricotta. The salmon cooked in Kombu with Nori chips had many satisfying textures and a pronounced umami flavour that really carried the dish as well. Finally, the service was top notch -- the bartender and waiter made sure all my needs were covered. Highly recommend trying it out if you're in the area and like fine dining. $90 for a tasting menu is honestly pretty good when it's executed to this level.
