Dining at NOL Restaurante in Mérida was an exceptional experience that delighted all our senses. From the moment we entered, the ambiance was warm and inviting, setting the stage for a memorable evening. Cocktails: A Creative Start We began our meal with their innovative cocktails, each a masterpiece in its own right. The “Ixi’im,” a tribute to maize, combined notes of huitlacoche, elote, and tortilla with Mexican whiskey, offering a unique and flavorful introduction to the evening. The “Metl,” featuring tepache with a spicy kick and mezcal, was equally impressive, showcasing the bar’s creativity and mastery .
