It is rare to catch a restaurant on its upward trajectory, before it becomes famous and may become an institution. You get to experience the place without any pretention, the enthusiasm and absolute dedication of that moment, as well as the obvious talent of the chef, his crew, and the restaurant staff. Having worked in Michelin star restaurants in Belgium, I know how hard it is to get to this level and survive the first couple of years. I have no doubt that this restaurant will survive and I consider myself lucky to have experienced it at this still very early stage. Őrség is one of our favorite regions, and when we spent the weekend here, we visited Pajta again. It wasn't the first time we visited them, and once again we had a really great gastronomic experience. István Akács took over the kitchen last year. He can claim a very diverse professional career, he worked in the famous Olimpia, Platán, Onyx, in star places in Scandinavia, and then he was lured home from Mexico by Pajta. He does not rethink the guard kitchen and does not cook guard food, since he is not a local, he thinks that would not be honest. However, he uses local ingredients from local producers, and by combining them with his knowledge so far, delicacies such as the empanada with mangalica meat and creamed corn, or the tortellini with a variety of mushrooms and mushroom tea and pecorino can be created - both are a true orgy of taste, they were very delicious. My personal favorites were the perfectly baked salmon trout with pumpkin and the beetroot tart with goat cheese. It is worth tasting the wines recommended for the dishes, sommelier Gábor Cseke really recommends a lot of interesting things. I have to single out the 2013 Losonci Italian Riesling, which was not my favorite, but for me it tasted so interestingly bad that it was already good, so it definitely remained memorable. Looking at the wine list, there are some very nice items, it's worth sampling, for me the late harvest wines were my favorites. For those who don't drink alcohol, I recommend homemade fruit juices - I drank a sea buckthorn apple splash and it was really extra tasty. The prices on the online wine list have not been updated yet, it's not a big deal, but a few white wines are listed at different prices - this is strange from an otherwise precise restaurant. We will definitely try their newly opened accommodation, Kástu, too, the nice little two-person cabins in the wonderful surroundings are very tempting, even if it is a kilometer away from the restaurant.
