For reference, Saturday mid-afternoon, Aug 2. As we were leaving, I asked to speak to the manager. When I did, I politlely informed him of the considerable list of issues (which are many more than the time I want to spend listing them) and said that having a service charge of 22% automatically added for such inferior and troubled service (which it really was), all that he said, a few times, was very perfunctory "I'm sorry." That reflects and added even more so to the poor service. This was an outside space that, for years, I looked forward to visiting. I cannot imagine going back. Bad service is one thing, but entirely indifferent and uninterested mangement is altogether another. Food: 2 Service: 1 Atmosphere: 4 Meal type: Lunch Price per person: $40–50

The peach burrata salad was super fresh and flavorful. The sea bass was outstanding. A beautiful rustic restaurant. High back curved leather seats are a great touch. One super annoying thing: the severs would ask every 3 minutes if they could take our plates when we were obviously still eating. A lack of awareness. Food: 5 Service: 3 Atmosphere: 5 Meal type: Dinner Price per person: $70–80

Prospect at Hotel Jerome has an upscale feel without being stuffy, and from the moment we walked in, Passion’s service made us feel welcome. I reserved the 3-course pre-theater menu for my wife’s birthday dinner, thinking we may order some additional small plates but we were pleasantly surprised. The portions were perfectly filling without leaving us overly full. We both started with the Green Goddess Little Gem salad, which was anything but little. It was a hearty salad with flavors and textures I haven’t experienced anywhere else. The sourdough crunch added something special and made every bite interesting. To help celebrate my wife’s birthday, the staff also brought us complimentary non-alcoholic champagne. It had the perfect balance of tart and sweet and was a thoughtful touch that made the evening feel even more special. For our entrees, we ordered the Pan-Seared Trout and the Paonia Chicken Breast. The trout was cooked perfectly—flaky, tender, and full of flavor. It was served with summer squash, quinoa, and a charred chimichurri that paired really well with the fish. The chicken was another standout. The breast was juicy with crispy skin that reminded me a little of Peking duck. It came with grilled asparagus, bell peppers, and crispy smashed baby potatoes that completed the dish nicely. Dessert was just as impressive. Because of our dietary restrictions, the chef prepared a special dessert for us. It included vegan chocolate chip cookies, sorbets, and seasonal fruit. It was thoughtful, delicious, and the perfect way to end the meal. The service throughout the evening was excellent. Our server, Antonio, was attentive, friendly, and genuinely passionate about hospitality. He made us feel right at home. Whether you’re celebrating a special occasion or simply looking for a great meal in Aspen, Prospect delivers. Between the food, service, and atmosphere, it was a memorable experience and one I’d gladly recommend to anyone visiting the area.
