Have been dying to try this new Ramen place since it first opened. The aesthetic is very clean and simple, with tasteful, Japanese wall art and decor. I love the blue accents. I ordered the Amber Ramen. It came with a beautiful, dark soy sauce base soup, with chashu pork, a bit of chopped onion, marinated egg, and their signature, perfectly al dente noodles. It was a very simple composition. But don't let this fool you! The broth is packed with deliciously, rich, umami flavors. This ramen has nothing to prove and lets the broth do the talking. Most importantly, it does not overwhelm your palette with unnecessary toppings that have no business being in ramen. Surprisingly I noticed staff were all quite young. So I was very impressed with not only the quality of food but also the attentive, efficient service. The kids are alright (they ran a tight ship by themselves and they can make a mean bowl of ramen). Tipped extra, I hope these young staff get to see it because they earned their paycheck. Overall, we will be back again to try their menu. My new favorite ramen place for its simple yet unique flavors. A breath of fresh air from Kitakata and Shin Sen Gumi.
