As a local playing tourist for the day, I wasn't expecting amazing food but I was expecting decent food. Brisket was not Texas bbq. No bark, no smoke flavor. Too moist, cut too thin. You are serving primarily tourists ... Show them authentic BBQ. At $20, the portion made local chains look generous and local hole in the walls downright lavish. Sausage was 3 small slices and no smoke flavor. Sides were mediocre as well.. Potato salad and slaw tasted like grocery store prepackaged which isn't a bad thing necessarily. Beans were oddly bland with fresh jalapeno notes. The ribeye at $27 seemed a bit like a bargain... We should have been leery but went for it. Regret, immediately. There was a hole in the middle... Which tells you something about the grade of beef. Oddly tender like it had been marinated or processed in some way. It was spotty on seasoning... Some parts were ok, others massively under. There's a price point and quality you gotta hit to represent the biggest tourist spot in Texas. This absolutely missed the mark.

Ribeye was well cooked but minimal flavor. Prefer only salt and pepper, but it was close to bland. The roll was grocery store quality, & the potatoes were room temperature. The burger had no Mayo, no side of Mayo, ketchup, or mustard with zero flavor. Service was average. Brought the wrong drinks, Sprite and margarita on the rocks. Had to ask for a Dr Pepper that my daughter ordered and why the margarita was not frozen. When the waiter inquired, he was told the margarita machine was not working. Also, not working was the tablet used to pay for dinner. Had to find one that worked. He was kind and not rude, but had hoped for better quality and decent food, which was not the case. I expected more from a family owned restaurant.

Not much to say about The Republic of Texas Restaurant. It wasn't very impressive. All right, I was in town visiting with my boss and his wife and he had suggested this restaurant as he said it had very good ratings. From the minute I walked in, I felt like I was in a chain restaurant. It was almost like a BBQ version of TGI Fridays. Having just landed an hour prior to our visit, we were parched. Our waitress was there to continuously fill our glasses with water. I was grateful for this. I had a hard time picking from the menu, but settled on the Brisket & Sausage Combo Plate. I wasn't a fan of the sausage and the brisket was very fatty. The best thing about this meal was the sides; potato salad, borracho beans, and coleslaw. If you're in town, looking for authentic Texas barbecue, I would give this place a hard pass. I've had better, up here in Connecticut.
