I try to come to this particular Rubio's once a week, since I work in the area and my office is just a couple minutes down the road. This is one of their test kitchens, where they are trying new things all the time. A few months ago I had their shrimp and bacon burrito, which was pretty delicious. However, I usually just get a couple of fish tacos, or the chicken nachos if I'm extra hungry. The interior of this restaurant was recently remodeled, and it looks great. Feels much more open and airy than it did before. They're not in the best location- this particular shopping center is a bit tricky to get in and out of, and it's always crowded during the lunch hour. But that just means they're doing things right, I suppose. P.S. Rubio's is no longer known as "Rubio's Fresh Mexican Grill" - they changed their branding about a year ago. Companywide, the stores are now called "Rubio's Coastal Grill."
