SBRACIO AND HIS IDENTITY Walking around Rome among the countless openings of new restaurants for which immediate closure is hoped to protect one's health, one sometimes comes across places of great value. In a popular neighborhood like Marconi it can happen that you enter SBRACIO and by scrolling through the menu card you immediately understand both by sequence and by the structure of the dishes that there is "the good hand" behind them. Imaginative, daring dishes, such as "grilled oysters, wagyu lard, cherry teriyaki" to "Gyoza (Japanese ravioli) of lamb in ramen broth" and while you are in distant countries you are caught up again by a "fettuccine with smoked butter and truffle whitewash". I chose "Grilled lamb, puff potato, mushrooms and dark onion", raw materials, cooking and flavors top marks! The skilled hand of Chef Andrea Cavallaro, made up of study and practice with great masters, has created a cuisine with a unique and particular identity, the likes of which are difficult to find in Rome. Well done Francesco Formicola who expertly explains the menu and the right wine to accompany the chosen dishes, simply, understandably and without the rhetoric that usually accompanies sommeliers. Well done, very good guys indeed. SBRACIO to recommend, to savor, to remember. Tip ... .a few more lights at the entrance to be more visible.
