I write to express the most complimentary opinion of Sushi Ryusei as a class act. Like other Japanese restaurants that have flourished since raw fish became acceptable to Western palates, the business is not cheap. Scholars have studied how within ethnic cuisines settle at specific price points, associated very much with their culture origin and not other factors; yes, there are some cheap Japanese venues and also expensive Chinese ones, but the difference is what has caused some entrepreneurs to open eateries of a heritage not their own, such as the many Japanese places with Chinese proprietors. In other reviews, I have opined against correlating ancestry with expertise. That is obviously objectionable if it is explicitly negative, and it ought to be regarded as a dangerous claim even if it is ostensibly positive (oh, that must be authentic because the chef is X and many of the diners are X). I have no idea who owns Sushi Ryusei. I can attest that it is excellent, with an ambiance that would not be unusual on the other side of the Pacific Ocean. I wish to highlight what is on the menu: shirako. That is a delicacy. If you have tried uni, ankimo, and fugu, and even if you are partial to natto, you might not know shirako. Or you'd have difficulty obtaining it. It is milt. That is a euphemism. It is fish sperm, and I believe the storage sac. You can watch videos of how it is harvested. After the fish is slit open, the whole organ falls out in an elaborate tangle. It is creamy and subtle and faintly fishy. I doubt you would want to eat it if you were informed in advance of exactly what it was. I cannot recall seeing it offered, even in New York City or Los Angeles. It's here. Try it.
