Twigs Bistro and Martini Bar is trying to set itself up as the new hip-and-happening spot in the valley. Wedging yourself betwixt a California Pizza Kitchen and Cheesecake Factory at a mall seems like a strange way to do that ... but the chain (with one other Utah location) may very well pull it off. Arriving around 6 pm on a Saturday, it was surprising quiet. I forgot that Millennials are always late. By 7, this joint was jumpin', and even all the outdoor seating was taken. For those familiar to the chain and their fun and "Burgers and Brews" summer event, it's not available at this location. I'm sure it has something to do with Utah's asinine liquor laws. Pffffft. We started with Moroccan Beef as our appetizer: Sautéed beef tenders with a touch of Moroccan spices served with grilled focaccia points, gorgonzola fondue and balsamic glaze. It was the best part of the meal. The Moroccan beef was tender and sweet, and the fondue was kick-the-bowl clean level of good. I had the Spicy Shrimp Po Boy: Jumbo prawns dipped in buttermilk and fried. Served on a toasted hoagie roll with sliced tomato, Creole remoulade, Twigs slaw and pickled jalapeños. I was unimpressed... you just can't throw a Louisiana classic on the menu, especially at $15. A small hoagie, a small sandwich, with a drab slaw, and only a few prawns (not "Jumbo" in IMHO) with the batter barely sticking to the prawns. My wife's Cobb was a bit better. The mix of mushrooms, bacon, tomato, and gorgonzola crumbles topped with BBQ chicken, avocado, and hard boiled egg with their signature gorgonzola dressing was a nice mix. Still, I've had Cobb Salads piled much higher ... at a lower price. I imagine someone younger would have a lot more fun at Twigs. For me, food comes first, second, and third, and barely passes the class.
