A True Taste of New Orleans and Pure Southern Hospitality!" If you are ever in Waco and craving authentic, soul-warming Cajun food, you must check this place out. The entire menu is a whole vibe! From the second you walk in, you’re greeted with the warmest, most welcoming energy. The owner Ms.Aneka truly has a heart of gold. She actually took the time to come to our table, chat with us, and make sure everything was perfect. You can tell she pours pure love into this place, and her staff matches that exact same energy—they were incredibly friendly, attentive, and just full of genuine Southern hospitality. Now, let’s talk about the food: absolutely incredible. One bite literally transports you straight to the streets of New Orleans. The flavors are spot-on, perfectly seasoned, and full of soul. We are officially regular customers and will definitely be coming back again and again. Do your tastebuds a favor and support this amazing gem! Meal type: Dinner Price per person: $20–30

Ordered the catfish atchafalaya and it was sooooooooooooooooo bland. The crawish tails on the etouffee were a bit tough, and the etouffee needed a lot of seasoning. The rice did no taste like fresh made white rice. Almost reminded me of the texture/flavor of uncle ben's. The catfish itself was a nice size piece, but again, bland. I tried doctoring up the dish at home to try and give it some flavor. Probably ate about 2/3 of it and sent it to the bin. Food: 1 Service: 3

Armstrong’s Bayou Café — The Sauce Knows Before the Menu Does There’s a certain kind of place where the menu is still figuring itself out but the food has already made up its mind. Armstrong’s Bayou Café, tucked inside Union Hall, feels like that kind of place. A glowing sign promises a “Creole scratch kitchen,” while digital boards scatter attention across baskets, boils, pastas, and loaded potatoes. A kiosk stands ready to take your order, quietly efficient, though it replaces the kind of conversation that might otherwise guide a first-time visitor through the noise. Because there is noise here. Fried ribs sit next to shrimp boils. Po’boys wave from the corner. Catfish baskets lean into familiarity. But none of it quite prepares you for what actually defines the experience. The pasta. The Seafood Bayou Pasta arrives in a simple black container, unpretentious, almost hiding beneath two slices of toasted bread dusted with herbs. It doesn’t announce itself. It doesn’t try to impress. But then you take a bite. The sauce—creamy, peppered, carrying just enough Cajun warmth without tipping into heaviness—wraps itself around penne, shrimp, and crawfish in a way that feels less like a dish and more like a decision that’s already been made. This is not experimental cooking. This is not chasing trends. This is something closer to instinct. The shrimp, slightly pale in color, suggests efficiency over showmanship. It’s not the star. It doesn’t need to be. The sauce has already taken that role and refuses to give it up. Each bite confirms it. Not louder, not flashier—just steady, consistent, and quietly persuasive. You find yourself going back. Not because you’re trying to analyze it but because it keeps asking to be eaten again. The toast, often an afterthought elsewhere, becomes a tool here—dragged through the remaining sauce, turning what could have been excess into extension. It’s a small detail, but it reveals something important: this is food that understands how it will be consumed, even if the menu hasn’t fully caught up. And that’s where Armstrong’s becomes interesting. Because while the boards highlight shrimp boils, po’boys, and fries, and while the word “Creole” sets certain expectations, the experience tells a different story. The gravitational pull isn’t the boil. It isn’t the basket. It’s the sauce. There’s a quiet confidence in that, even if it hasn’t been fully named yet. The operation itself feels personal—almost familial. A small team, a baby nearby, a rhythm that suggests care more than scale. It’s the kind of place where the foundation is present, even if the framing is still shifting. And perhaps that’s the real takeaway. Armstrong’s doesn’t overwhelm with precision. It doesn’t guide you step by step. It doesn’t explain itself. But it doesn’t have to. Because somewhere between the first bite and the last spoonful, the food has already done the explaining. And once that happens you don’t really need the menu to tell you what matters anymore. Price per person: $20–30 Food: 5 Service: 5 Atmosphere: 5
