Short Review: Wok Asian Recipe is a great neighbourhood find. What to order: • Salt fish and chicken fried rice • Pork Ribs with sweet vinegar sauce • Scrambled eggs with king prawns • Lemon Chicken Classic Cantonese style big wok (大镬) cooking. Delivers great food every time I’ve ordered. Available on Ubereats... but just as easy to phone them for pick up orders. Good value for fresh food cooked by a great chef. Longer Review: Cantonese Food vs Other Parts of China Chinese cuisine is as nuanced as any other respected world cuisine. All you need is an open mind and a hungry curiosity for flavours. At Wok Asian Recipe, the food comes from Cantonese traditions. This is different to cuisine from other regions of China. Without realising it, many people in the Western world probably grew up eating Chinese food cooked by someone from Guang Dong or Hong Kong. What’s traditionally Cantonese The classic dishes like sang choy bow, chow mien ... fried rice... beef and broccoli... sweet and sour pork... have come from traditions of someone with a really deft hand at handling a huge 3kg wok blasted by hellish gas burners up to 6 times hotter than our home gas tops. It’s not just the way it’s cooked (at such incredible speed and dexterity) but how it’s seasoned. Flavour Profile of Cantonese Cuisine Cantonese food is famously accessible. Not really big on chilli. Or other spices that burn the mouth or numb the tongue. Perfectly seasoned with garlic, spring onions, light and dark soy, sesame oil... balanced with salt, sweet and a hint of acidity for dishes with vinegar... and always there’s that hint of smokiness that can only come from wok cooking. Compare this to Shang Hai cooking where sichuan peppers are far more prevalent. And their liberal use of oil is very different to their southern countrymen. Up north where the weather can be freezingly cold, they cook food with lots of oil... and this dense energy gives them the fuel needed for work. Down south where the weather is hotter, the food can be often seen cooked with far less oil for a relatively lighter mouthfeel. Shanghai is famous for dumplings served with vinegar, whereas Cantonese is famous for steamed dumplings you get at a dimsum restaurant. I love all food so it’s not a matter of one being better than another. In fact many Western foodies are beginning to know about these differences too. Giving them the opportunity to relish every type of dumpling, noodle and specialty dish from every part of the world. Why Cantonese food is so well known yet Mandarin is one of the most widely spoken language in the world. Yet it’s the Southern China Cantonese people who were the ones dispersed to the four winds, sharing with the greater world their culture through their culture and food. Every now and again, you get to eat food cooked by someone who is skilled, with an attention to the way it tastes. This is how I feel about Wok Asian Recipe. Having grown up in Malaysia and eaten Cantonese style cooking for over 30 years of my life, this restaurant is a great example of a comfort food cooked by a true pro. While it’s all subjective opinion of course but the overall great reviews for this restaurant does speak volumes in the world of Google Reviews where most of the time people might only slow average ratings of about 3.5 and up. This restaurant continues to garner good reviews and I believe for good reason.
