I had the eel shabu-shabu at Ido Restaurant in Yeouido, and it was an unforgettable experience. The eel was incredibly fresh, but what really stood out was the unique dipping sauce—completely different from the usual soy or chili-based sauces. It perfectly complemented the richness of the eel. The broth developed great depth of flavor as we cooked the ingredients, and the noodles served at the end made a satisfying finish to the meal. The interior is clean and modern, and the staff were very attentive, even helping to serve individual portions once the shabu-shabu was ready.
